CONCEPT
A bursting-like bright impression at the first sip, and a good degree of dryness in the aftertaste, expressing the sea of Katsuura.
The master brewer at Azama Nada Shuzou, Mr. Kikuchi, does not really likes the strongly sweet sake that the new brewers are making nowadays, but instead, he brews with the intention of making a sake that you can drink without hesitation and for a long time.
These original series of “naruka” are bottled directly from the tank, giving a fresh bursting feeling and a smooth dry taste, with a little umami rich flavor that unveils in the mouth, and quietly draws back to disappear. A clean taste that can be compare to the magnificent sea of the Katsuura Bay.
Brewery / Azamanada jouzou
The brewery Azama Nada Jouzou is located in the harbour city of Katsuura, in the Chiba Prefecture. The Katsuura Bay is just a 5 min. walk away from the brewery, and displays at a glance the view of the mountains and the sea that surrounds it.
It produces two brands: “Azuma Nada” is brew for the local market, and “Naruka”, which is brewed by the “jikatsume (bottling directly from the tank)” method, which enables a great amount of freshness, and is only carried by specialty sake stores.
From 2020, Mr. Kikuchi Yuzuru has been working with a lot of famous brands like “Zarusou Hourai (残草蓬莱)”, “Suifu Jiman (水府自慢)” and “Yuutou (雄東)” among others, and when he got transfered to Azama Nada, became the touji (master brewer) for this brewery.
