CONCEPT
Sell trees, buy rice, and brew sake wines.
The worth of making sake over generations.
The brewery is situated deep inside Kiso Valley, which the great Haiku master described
in his poem. It is located at 936m above sea level. Their slogan is "The sake brewery the
closest to the star in Japan". It is often said that the colder temperatures make them
brew good sake wines. But in Yukawa Sake brewery it is so severe in winter that moromi
must be warmed instead of being cooled. Additionally, they have a history of paying trees
as a tax instead of rice because this area is forested, rice cannot be grown. In recent years,
many sake breweries have been making rice by themselves and following all process from
cultivation to brewing like a wine-making style, Domaine. Why is this brewery has
continued making sake for nearly 370 years, even though the land is not suitable for sake
brewing or rice cultivation? What would be the meaning of their existence?

Brewery / Yukawa Sake Brewery co.,ltd.
The sake brewery closest to the stars in Japan.
The brewery is located at an altitude of 936 meters, one of the highest in Japan. The temperature drops to minus 18 degrees Celsius during the coldest months of the brewing season, from December to February, making it a freezing environment that is by no means optimal for sake brewing.
Kiso Village is also the home of the headwaters of the Kiso River, which flows into the Pacific Ocean. The abundant well water used for brewing is a precious asset nurtured by the nature of Kiso, and we continue to use it with great care.
The head of the family is Naoko Yukawa, the 16th generation. The owner of the company is Naoko Yukawa, the 16th generation. The brewery produces two brands of sake, “Kisoji” and “Kuroemon XVI”, based on the concept that “tradition is something that changes with the times and is connected to the times”, with a rich flavor of rice and a pure and light aftertaste.
