CONCEPT
A “little bit of a solid product” from a hidden, remarkable brewery where the young master, Nobuhiro Nakamura, struggles on his own.
Nobuhiro Nakamura, the 12th generation head of the family, in his mid-30s, studied sake brewing at the Tokyo University of Agriculture. After graduation, he trained at the famous Kamikigen Sakata Brewery in Yamagata before returning to his family home. Nobuhiro's father is elderly, so Nobuhiro is the lone breadwinner. Nobuhiro is a taciturn and shy man, so he decided, "Let's make a product that is a little more sophisticated! The decision was made. The concept of “Petit Petit Kotobuki” was born from the combination of “Kotobuki,” the brewery's original brand name, and the feeling of petit petit in the mouth, and this series was born.

A small but brilliantly good brewery in Shunan City, Yamaguchi Prefecture
Did you know that there is a small brewery in Shunan City, Yamaguchi Prefecture, called Nakashimaya Sake Brewery? When it comes to Yamaguchi sake, small and unknown breweries tend to be buried in the midst of famous brands such as Dassai, Gangi, and Toyo Bijin, but this Nakashimaya Brewery is a small but good brewery that shines brightly. There are three representative brands. Kanenaka is made from the nama-moto style and tastes great at room temperature or warmed up. Kotobuki, the oldest brand, is characterized by its sweet and fragrant aroma. Nakashimaya” is the brand name of the central brand, which is the name of the brewer's house. These are hidden breweries of note whose quality is improving year by year.
A visit to the brewery in person will reveal its secret. Due to the expansion of the prefectural road, the brewery is undergoing a major relocation and renovation in 2021. At that time, a new koji room was built, all large tanks were discarded, and the entire brewing process was changed to small-scale brewing. The brewing site is kept new and very clean. This has probably led to the improvement of the clean sake quality in recent years.
