CONCEPT
The “feeling of ease and relaxation sake” that the brewery intends to create,
adding an original light and refreshing taste.
Besides from the kijoushu, the concept for the standard sake of Enoki Shuzou is, as is also written in the brewery site, a “feeling of ease and relaxion sake”.
The taste, just in the middle of classic and modern, is very famous in Hiroshima, as a sake to drink while taking the meals.
We had brewed an original sake for Concept Workers Selection that adds a light and refreshing sensation, while coming up with a label and a title that represents that feeling.
Sake rice producer / Takamiya Sake Rice DepartmentSake rice “Koi Omachi” developed by the Prefectural Government. Very few farmers crop this rice.
The Takamiya Sake Rice Department, of the Agricultural Cooperatives of North Hiroshima, which is the control center for North Hiroshima JA (Japan Agricultural Cooperatives), cultivates the rices Hattan Nishiki, Hattan No.35, Zenbon Nishiki, Omachi and Koi Omachi. The rice “Koi omachi”, used by Hanahato, was developed by the Prefectural Government specially for sake brewing, and is a breed between the rices Kairyou Omachi and Nihon Masari.
Kairyou Omachi was raised to be strongly resistent from falling down, and to have a rather quick development. Is a rare rice, grown by very few farmers even in the Takamiya area. The “Peaceful series” of Hanahato uses this type of rice.
Brewery / Enoki shuzou
From the region of Ondo no Seto (a strait in the Seto Inland Sea), with a strong relation to Taira no Kiyomori (a military leader from the Heian Period, with great importance in the Japanese History), is the first brewery in Japan to brew “Kijoushu (a type of sweet sake brewed with sake instead of water)”
The brewer of the “Hanahato Peaceful Series”, Enoki Shuzou, is located in Ondo, in the Kure City (Hiroshima Prefecture), which is known for the legend of “Ondo no Seto”, where Taira no Kiyomori stopped the setting sun with his folding fan, and excavated the strait in just one day.
Enoki Shuzou was established in 1899. In 1974 (the year 49 of the Showa Period), it brewed the “Kijoushu” for the first time in all Japan, and amongst the people that know Hanahato, there may be many to remember the Long-aged Kijoushu, that has shined with the Gold Medal for 8 times in the International Wine Contest (IWC).
The lovely logo depicting a dove in a flower, is also very famous between the ladies in Hiroshima.
