CONCEPT
Sake that reflects the verdant natural landscape
of Takashima on the shores of Lake Biwa.
Fukui Yahei Shoten is a 5-minute walk from JR Omi-Takashima Station and is by the
magnificent Lake Biwa. Thet have been brewing sake wines over 260 years in Takashima,
Shiga Prefecture. It is reported that at the time of its foundation, the Lord gave the
name "Haginotsuru" which is for Hagi (bush clover) that clumping together in Katsunogahama.

Fukui Yahei Shoten uses a diverse range of rice, including Yamada-Nishiki, Shiga Wataribune Roku, Yamadaho, Ginfubuki, Nihonbare, Koshihikari, and Yume Mirai. In our hometown of Takashima, we are engaged in contract farming of “Yamada-Nishiki” and “Ginfubuki,” which are environmentally friendly agricultural products standards that reduce the use of chemical synthetic pesticides and fertilizers to 50% or less of normal levels, thereby reducing the burden on the environment. The Yamada-Nishiki used in this Haginoro-Kaze is contract-grown Yamada-Nishiki rice by Eijiro Nakamura, a single farmer from the local Takashima city, and Nishi Saka, an eco-farmer.

We want to make sake that brings to mind the peaceful and rich scenery of our region.
The brewery that produces this Haginotsuyu - KAZE - is Fukui Yahei Shoten located in Takashima City, Shiga Prefecture. The brewery has a long history of brewing sake in Katsuno, Takashima-cho, Omi for more than 260 years since its establishment in the Kan'en era (mid-Edo period). It is said that the name “Haginotsuyu” was given by the feudal lord at the time of the founding of the brewery in reference to the bush clovers that grow on the beach at Katsunogahama.
It is said that sake is a mirror of the local climate. Haginotsuyu says that it wants to brew sake by taking good care of local blessings such as the rich nature of the region, quality rice grown in the satoyama, and the softness of the water. When you drink Haginotsuyu, you will be reminded of the peaceful and rich scenery of the area... This is the kind of sake we aim to produce.

A dry, slightly effervescent, crisp Haginotsuyu. When we heard that the sake was named “Carnivorous Junmai-shu,” we discussed the name with Sakeshow-Yamada, and decided to express it with impactful carnivorous animals: “lion,” “bear,” and “wolf,” respectively. We used a variety of colors to create a gorgeous finish in the hopes that not only men, but also women, will pick up the sake and experience its qualities.
