CONCEPT
The taste changes every year. This year's theme is “Expressing the dry sake I want to make now.”
Mr. Yoshiyuki Sato, the toji of Hagino Sake Brewery, is a skilled brewer who has won the Young Brewer Encouragement Award at the SAKE COMPETITION 2019, which supports the next generation of brewers. We decided to release a sake with a different flavor every year under the theme of “what you want to make now” so that Mr. Sato can enjoy brewing sake in his own way. Last year's theme was “How does the flavor change depending on the rice polish?” and last year's theme was “How does the flavor change with the polishing of the rice? And this year's theme was decided to be “the expression of the dry sake I want to make now”.

The ideal sake is “a sake like a casual but elegant t-shirt, that you can wear pleasantly everyday”
The brewery that makes Hagi no Tsuru is Hagino Shuzou, located in the city of Kurihara, in the Miyagi Prefecture.
One may think that the ideal sake is the one that fits the taste of all 100 people out of 100 that tasted it, but instead of that, Hagino Shuzou would like to brew a sake that they themselves can certainly say that is delicious, and since being a sake brewer, they pursue not only a sake that can pair with food, but also a sake with its own personality that remains in the memory of your senses.
Based in their concept of brewing only a small portion but with good quality, they aim for a sake brewing that is always evolving, keeping the unique history and tradition of sake, and at the same time introducing new techniques.
The sake that Hagino Shuzou thinks of an ideal, is not like something that you would wear to go outside, but something relaxing that you can wear at home, a sake that you can enjoy at ease without becoming stiffed.
A sake in a wine glass that you get at an expensive restaurant is also charming, but one that you can pour in an everyday cup without thinking much about it, is one that fits your character. To make a comparison, they intend to brew a sake that would be not like a fancy dress that you wear only on special occasions, but like a casual shirt that you can wear everyday with a feeling of ease.

Graduated from the Interior Design Department, at the Anabuki School for Design.
Entered the company U Enviromental Design, where he deals with the planning and designing of roads, rivers, and parks, especially for public spaces. Besides the everyday duties of layout and accounting, he is also in charge of the architechtural rendering and elaboration of proposals as well as reports for delivery of goods.
Entered the company Nichibi. Works in advertisement, mainly designing the printed materials and data design for the comany website.
From 2004 starts working freelance.
